One of the guys i work with has booked a long weekend in New York with his girlfriend in November and it turns out to his surprise that it's on a major American holiday that we don't celebrate here.
I've mentioned Macy Day parade and watching the Cowboys but that's about the extent of my non-family day knowledge of things to do. Does anyone have any other suggestions?

It's Thanksgiving. You watch the parade, you eat, you watch the Cowboys. I think you pretty much covered it.

New York will already be decorated for Christmas, I'm sure. The big tree in Rockefeller Plaza is usually pretty stunning, and you can go ice skating in front of it.
I liked the NBC studio tour, right there in Rockefeller Plaza as well.
Not sure about many other holiday traditions except from what I have seen in movies. Macy's Thanksgiving Day parade is the BIG one he'll want to catch.
